Apple pancakes with nuts

Irmtraut Volkmann shows how simple and delicious dishes made from healthy organic food can be with this recipe for her super tasty apple pancakes with nuts.

The recipe comes from her cookbook for the book "Human Ecosystem - Health is Possible", VBN-Verlag 2009

Pfannkuchen mit Äpfeln und Nüsse

Ingredients

  • 150 g each of fresh, finely ground wheat flour and buckwheat flour 
  • 2–3 eggs ½ l whole milk 
  • approx. 200 ml carbonated mineral water 
  • 1 pinch of sea salt 
  • 100 g chopped hazelnuts, alternatively walnuts or almonds 
  • approx. 500 g Boskoop or similar 
  • to taste ½ tsp freshly ground cinnamon 
  • maple syrup to sweeten 
  • butter or lard for baking

Preparation

Whisk the flour, milk, salt and eggs with the mineral water and leave to soak for about 30 minutes.
During this time, remove the core from the apples and grate them. Fold them into the batter with the roughly chopped hazelnuts and cinnamon. Carefully fry thick pancakes in a very hot pan with butter or lard. Sweeten with maple syrup before eating.
Our tip: If you want to do something good for yourself, choose organic products wherever possible - preferably regional and seasonal. This is especially true for animal products and perishable fruit and vegetables such as fresh berries, grapes, apricots, pears, herbs, rocket, cucumbers, eggplants, tomatoes, peppers and spinach, which often contain higher levels of pesticides.
Note for allergy sufferers: If you are allergic, please only use roasted nuts/almonds - these are well tolerated in most cases!
